Jim Caviezel...sure, his turn as first-century Palestinian separatist Yeshua Bin-Yosef was really only memorable for him getting his ass kicked, but because of it, people tend to forget Frequency, The Count of Monte Cristo, or the fact that he was the original choice to play Cyclops in X-Men. he did a great job playing our lord and savior, too but I'll agree shockmaster That is Shocker's way of saying Jesus...

Emilio Estevez? For what? The Mighty Ducks? No, but the Young Gun movies were pretty badass

A lot of people, many of whom nowadays try to be serious actors, are underrated for the cheesy comedies they starred in during their early careers.
Cases in point: Val Kilmer in Real Genius or Top Secret, Michael Keaton in Gung Ho or Night Shift, and Tom Hanks in Bachelor Party.

Benico Del Toro - This guy's talent is unlimited, he never ceases to amaze me, but he never gets lead role to prove his worth.
Guy Pearce - He always way under the radar and stays out of the main stream(for the most part) but always delivers a good piece of acting.
Ryan Gosling - He might be the next big actor to break through, but right now he's highly underrated.

Jeremy Davies is great too, but I have never heard anyone really bring him up. I think that his performance in Rescue Dawn was superbly done. The way he delivered his lines was excellent.
