Oooooh a tough topic. I am definitely more of a director focused guy than an actor focused guy but I can list some favorites.
Big fan of Philip Seymour Hoffman, Jimmy Stewart, Roy Scheider, John Cazale, Daniel Day Lewis, Sidney Poitier, Lee Van Cleef, Marlon Brando, Brian Cox, Jennifer Jason Leigh, Russell Crowe, Christian Bale, George C Scott, Sterling Hayden, Jack Nicholson, Tom Cruise, Michael B. Jordan, Idris Elba, Jennifer Connelly, Grace Kelly...
Too many to count.
I definitely prefer character actors to big showy method actors though. I don't like when you can "smell the acting", so to speak. But sometimes you need a Tom Cruise.

Definitely a fan of many that are mentioned already, but two I'd add that haven't been mentioned yet are Gene Hackman and Denzel Washington. Both of them are actors that I'd say that even when they're in a movie that's not great, their performances are always good. Both are also good at playing either a hero or villain.

I watched Night Moves with Hackman a few days ago and can confirm, it was an okay movie elevated by Hackman who was easily the best part.

I watched Night Moves with Hackman a few days ago and can confirm, it was an okay movie elevated by Hackman who was easily the best part. And when he's in a great movie, he just makes it that much better. I'm so glad that Clint Eastwood talked him into Unforgiven, when Hackman was hesitant. He's just so good in that film, such a great villain. Great example of a bad guy, not being over the top and yelling, he came off like someone you could cross today.
