To swap knees, just use a hairdryer to heat up the knee area. The knee itself, the calf below and the thigh above. A lot of people say to use boiling water, but the hairdryer works just as good and faster. Heat the area up for 1-2 minutes. The thigh will need the most since it's thicker. If the figure has a kneepad, you'll either need to cut it off or remove the calf first and slide off the knee pad. Then you'll need some type of tool to push the pegs out. You can use a small flat head screwdriver. I use the handle of a small file. Anything that will push the pegs through the holes. Again, just make sure it's good and hot. Then when you want to put it back together just reheat everything except the pegs and reassemble. I like to push the peg through as far as I can with my finger and then wrap it in a piece of cloth and finish it with a pair of pliers. You use the cloth to prevent the teeth of the pliers from leaving marks.
As for the paint, that's just going to be trial and error. Mix up some paint and test it on a scrap toy or something. When you get the color you like, paint the figure. Remember to thin it down and do 2-3 thin coats for a smoother look as opposed to one thick coat. I use Testors Model Masters Acrylic paint since it's thinned with water as opposed to chemical and it washes up easy. And it's fairly easy to get. Hobby lobby sells it and sometimes you can find it at Walmart near the model cars. Or you can google it, there are a lot of sites that sell it pretty cheap.
