Coolest wrestler(s) i've met would have to be between Awesome Kong, Xavier Woods and Skip Sheffeild.
I met Skip at an FCW show last march during NXT Season 1. He along with Darren Young and Heath Slater were signing autographs before the show. I got pics with all of them but Skip was probably the most friendliest. He goofed off while taking the pics and actually asked me to go and tell Jamie Keyes that he said She Looked beautiful. Jamie was kind of a bitch but was like tell him I said Thank You.
I met Awesome Kong after a TNA Taping which happened to be on my Birthday back in June of 2009. Her along with Hernandez, Homicide, Alyssa Flash, ODB, Cody Deaner, Jay Lethal and Consequences Creed( aka Xavier Woods in FCW). Kong was really sweet to everyone and even wished me a happy birthday. She signed my program and continued to chat with fans.
Xavier Woods, I have met on two occasions. First time when me and my mother were chosen to go backstage during a TNA Taping to meet Chris Daniels and Woods. Both were nice and took pics with both of them. When I had met Kong, He remembered me from the first time as he remember my crazy mom who was excited that we went backstage and was flirting with both men (lol!).
Probably the rudest superstars I met were: Hernandez and Brother Ray. Some little boy asked Ray for an autograph told the kid he would be right back and just left the kid hanging. Was really snotty and kind of acted like whatever. Same for Hernandez, Kind of an arrogant bunghole but it was whatever.

Nicest- Mick Foley
Rudest- The Rock
but as someone else said I think one of the big attributing factors is that people have their good days and their bad days.

Coolest: Molly Holly (I met x2), RVD (I met x2 and he seen my sign with the picture of me, him, and my brother from the last time and signed a trading card, action figure, and his worn wrist tape!), Kurt Angle, Mickie James( I missed my Senior Prom to see a Raw house show and I told her and she felt bad and took a pic with me and signed my IE Mickie figure.) and Layla(I was the only one that night who was able to take a pic with her and get her autograph, she was in a rush and almost ran late but since she could tell that I was a huge fan, she took the time to do so.)
Rudest: MARIA! (The begining of the show w/ Layla and Eve, she was late and in a hurry, but after the show, she signed everyone autograph, but when it came to me, the last person of the line, she said she had to go. What a *****!) I also got Rhino's autograph before, he did not want anyone to take his picture, that was kinda rude too. And of course, Morrison and Melina, they both entered and exited a different part of the arena than the other superstars/divas so they would be bothered.

Rhino part is kinda rude, but understandable I guess. JoMo/Melina is perfectly fine to me, nothing rude about it.

Oh damn. I just remembered...
RUDEST: Abraham Washington - I went up to him, when no one was around (@ an FCW show).. I politely said hello and asked him if I could get a picture with him... he just gave me a dirty look and walked away. Not really sure why I didn't remember that until right now. It was very rude. I will never support that guy because of it. The guy is wack anyways. I just figured I'd approach him since no one else did.

Team 3D and Jeff Jarrett were really cool when I met them, as were Edge and Matt Hardy. I've never really met a "rude" wrestler, but guys like Eric Young and Alex Shelley didn't really say anything or make eye contact. Weird. I met him and Sabin at the same event in 2007 and they were class acts there as well. Sabin even busted out the TNA X-Division Title and posed for pics with it. Speaking of other times, might as well. 2001, I met Mick Foley, and got him to sign my copy of Foley Is Good [And The Real World Is Faker Than Wrestling]. 2002, I met Big Show - same event where I met Foley the year prior and would meet Stacy [bitch] and Kurt the next. He was a class act. Asked him to stand up just to get a size comparison. Cameras for TV do not do any justice to how tall this man really is. I also remember seeing Teddy Long - pre-SmackDown! General Manager, 5 minute White Boy Challenge Teddy Long - sitting in the first row of the bleacher section where a Raw house show was. I left my seat and went and talked with him for a little bit about the match that was going on. Think Mack was involved somehow. This was 2003. Other people I've met include:
Marty Jannetty Joey Mercury North Star Express [Indy team] Metal Master [Indy guy] Josh Abercrombie [Some here may know him. "Who wants a mustache ride?!]

The rudest i ever met is Jerry Lawler. I was getting on an elevator to go up to my car in the parking garage and right after i got on both Lawler and JR got on. I wasn't even going to bother them just going to my car. JR looked and saw my Summerslam 08 chair and asked if i like the show. I said yes and he said he would sign the chair when we got to his floor i said thanks.
Well at that second lawler got all pissed like my brother and i were second class citizens and didn't deserve to be on the elevator. He asked his security guard to remove us and JR said that wasn't necessary. I could tell Lawler was being an ass so i just turned to him and said ill just catch the next elevator up. JR was angered at him but i didn't feel like dealing with Lawler.
Shortly after that i got back on to the elevator and John Morrison got on this time. Very cool guy and it was the second time i had met him as i had met him 4 years previous when he was still wrestling as John Hennigan. He was extremely gracious and signed both my chair and my brothers and we went on our way when we got to our floor and left in our car.

I've personally not met too many wrestlers, but the ones I have met seem pretty nice.
The one story that really stands out about meeting a wrestler though is Kurrgan. A few years back while in university I went to lunch with a friend of mine from the same residence and we went back to his room to hang out until it was time for class.
While we were there a girl poked her head into the room and asked if she could show it to a campus tour, so my friend said OK. He stepped out into the hall to talk to the group (he was an RA) and when he did he screamed! So naturally I stepped out to see what was the matter, and there with the group, standing just off to the side of the door is Kurrgan.
He laughed about it once we explained that we were wrestling fans and recognized him. It turns out he was there on a campus tour with his daughter and a group of students from her school. He was a very nice guy, but the last thing you expect to see when you step outside the door is the Acadian Giant!

I've met Lita, Christy Hemme and John Cena all at autorama shows. Lita was very nice, took a picture with me and signed a picture. She talked to me about bands we both liked and also posed with me for a picture for a local newspaper (which never got printed wtf!) Christy Hemme was also nice but seemed very bored. There was no one in line to meet her so we talked for a bit about the diva search and her leaving WWE. John Cena was by far the nicest. I met him during his early chain gang days, he talked to everyone in line for at least 5 minutes each, stayed longer than he was scheduled for and even autographed his lock necklace and gave it to a fan.

Never got the privilege to meet any wrestlers, But I get this impression that CM Punk is an absolute prick and not by the way he acts on TV.

I've only met Chris Jericho, Skip Sheffield, Darren Young, and Heath Slater. Jericho was at an autograph signing. He was wearing glasses but I don't find that douchey cuz there were a ton of cameras, so he was probably wearing them so he could actually see. He tried making some small talk but I honestly froze up and just answered whatever questions he asked me.
I met the other 3 all together. Sheffield and Slater seemed to get a kick out of getting noticed (they were still on NXT at the time) and were pretty cool (Sheffield's hands are gigantic BTW). Darren Young had already walked by and didn't realize everyone stopped. Then when he noticed he walked back to us and shook our hands. Just for that I'd have to say the coolest was Young.
Also, I didn't meet him when he did this but a few years ago I went to a small house show and Tommy Dreamer came out through the main exit with all the fans and stood outside signing autographs for 2+ hours. Maybe it was a New York thing and he got the biggest pop of the day. Also, when I graduated from college, Tommy Dreamer sent me a direct message on Twitter (we went to the same college).
