Have there been many 3.75" articulated wrestling figures other than the Build & Brawl line? I know that there are/were a couple of Japanese figures (Liger is the only one I remember) that seem quite hard to come by, but does anyone have a comprehensive list?

there were at least 16 from the japanese figure set (I had the complete set at one time). The only other 3.75 figures that I know of that are wrestlers are the GIjoe Sgt Slaughter and Roddy Piper figures.

What was the size of the WCW ones that came out from OSFTC? -[oz] I don't have one handy, but they were very close in scale to WWF Hasbro and WCW Galoob figures; maybe a hair taller.

What was the size of the WCW ones that came out from OSFTC? -[oz] They're too big. I have a Goldberg of those that my girlfriend repainted as Big Show to use with my Build n Brawls. It's a lot bigger than the BnBs but kinda works as Big Show (although he's got a BnB figure now anyway). The Kevin Nash Bend n Flex is also kind of in scale with 3.75" figures considering Nash is a tall guy. I see that Highspots sell a lot of those Japanese figures, MDK, but they're pretty expensive (considering I'm not generally a collector of rare/exotic figures).
