There is a Japanese Don Frye that has one of the UFC titles, and I know that there are some Pride figures of guys that are fighting in the UFC now but that is as close as you are going to get.

Yeah, I saw some UFC figures on Ebay whilst browsing, they might be Japanese as they have no articulation

Theres a 12 inch Chuck Liddell that looks sick that is being made. No news on any other figure.
