Bret's defining moment really should be Survivor Series 97 -- it's the one moment of his career that EVERYONE knows about.
In all honesty, the only other Bret Hart match that I really know of is SummerSlam 92, when he lost to the British Bulldog... other than that and his WrestleMania match against Vinny Mac (terrible match -- worst WM match EVER), I've not bothered watching any of his matches.
If it's any other defining moment, then it'll be a moment that I'll be learning about for the first time.

Well, as a moment that is infamous in pro-wrestling, Montreal Screwjob would be obvious. You'd also have a some nice accessories as others have stated.
I'd really like to see a different attire, though, because I have all of the JAKKS CS Bret Harts. I'd like his WM12 attire or Survivor Series 96 attire.

I dont think its necessarily his Defining Moment, but perfect figure choice would be Summerslam 1997. Flag, Jacket (Matches Hart Foundation Bulldog), Belt, Glasses. I would love to see this figure.

The DM doesn't have to be THE defining moment of a legend [see Ricky Steamboat] but a major moment in their career that from a consumer perspective has enough extras to make it worthwhile from the typical legend figure.
Summerslam 97 could work for that since he won the tile, which could be included. Only thing I don't remember is if he had the Canadian flag with him for that show. The Survivor Series 97 DM figure could be written up in a manner to portray it as Bret's final showdown with his hated rival, which would not come to a full resolution until 2010, to offer the happy, positive moment. Besides, Bret didn't have a problem with Jakks doing a MSJ version in their line and he was even packed with HBK.
